Asian Chicken
1 lb of chicken (cut into cubes)
Vegetables (any thing you have in your freezer or fridge or particularly like in an Asian inspired dish
I used 1 small 16 oz bag of frozen peas, broccoli and carrots
Light soy sauce
2 tbs coconut oil
1/4 cup of whole wheat flour
1 cup quinoa
Pinch of pink Himalayan salt
Pinch of black pepper
General Tsos chicken seasoning



Place chicken in small plastic zipper bag with the flour and toss till coated
Add 1 tsp of coconut oil to pan and sear until golden brown
Then place frozen veggies, general taos seasoning in pan, reduce heat and cover.
The water in the veggies and the seasoning will create its own sauce.

In separate skillet put 1 tsp coconut oil and brown the quinoa. After browned add 2 tsp light soy sauce and water as directed on package (1 1/2 cups per 1 cup quinoa). Bring to boil then simmer.

Then place quinoa in yellow container, veggies in green container and protein in red container. PERFECTLY PORTIONED MEAL.

Plus it’s kid and hubby friendly with leftovers.
